It’s prime season for berries and strawberries are some of the best.
Whether in Pimms, with cream or just plain there are countless ways to enjoy this beloved and versatile fruit. Here are five interesting and easy recipes for savouring strawberries.
It takes less than 5 minutes to whip up this snack whether for yourself or an impromptu get-together. Simply remove the core and drop in a dollop of ricotta. Drizzle with honey and sea salt for extra flavour.
The perfect summer treat on a hot day. In a blender mix 2 cups whole strawberries (topped), 1 cup milk, and a dash of sugar. For a popsicle with a kick replace the milk with vodka. Pour mixture into popsicle moulds, which can be found at your local arts & crafts store, freeze and enjoy! There are countless variations on this recipe so don’t be afraid to experiment.
Great for donuts, cheesecake and scones, a strawberry glaze is easy to make and can compliment a variety of dishes. Puree ½ cup fresh strawberries, then whisk in 2 cups confectioner sugar. No food processor, no worries; for a thicker glaze simply mash the strawberries.
A great summer party snack sure to delight friends and family. Top and half six strawberries. On Triscuit crackers, cracked pepper and olive oil work best, spread a teaspoon of cream cheese then top with a strawberry. Simply add a drop or two of balsamic vinegar on strawberries and serve.
For a healthy and delicious salsa chop 1 mango, 8 large strawberries, ½ red onion, 2 tablespoons fresh mint leaves and 1 jalapeno. Add a splash of lemon juice, and salt and pepper. Makes 2 ½ cups. Corn or pita chips are the perfect vehicle for this tangy salsa. For a healthier option use as a topping for grilled chicken or halibut.
