Recipe: Apple Crumble Slice

125g unsalted butter
60g golden caster sugar
1 large free range egg
1 tsp vanilla extract
185g plain flour
1 tsp baking powder
60ml milk

6 Granny Smith apples (peeled, cored and diced into 2cm cubes)
2 tbsp butter
225g soft brown sugar
1 tsp cinnamon

160g cold butter, cubed
225g soft brown sugar
160g plain flour
175g rolled oats

Hand mixer
13” x 9” baking tray lined with baking paper

1.Preheat oven to 160C
2.For your base, cream the butter and sugar until light and fluffy.
3.Add in the egg and beat well.
4.Add in the vanilla extract.
5.Sift the flour and baking powder together and add to the butter mixture.
6.Beat on the low speed of an electric hand beater until just combined.
7.Spread the mixture evenly onto the bottom of the tray.
8.For the filling, put the butter in a medium-sized saucepan over a high heat on the hob and allow to melt, but don’t let it burn.
9.Add in the sugar and cook for a minute, stirring frequently.
10.Add the apple cubes and cook for three minutes or until they start to become slightly transparent, making sure to stir constantly.
11.Remove from the heat and set aside to cool.
12.Once cooled, pour the mixture, including the sauce, on top of the uncooked base and spread evenly.
13.For the topping, place all ingredients into a bowl.
14.Rub them all together using your fingertips until it resembles breadcrumbs.
15.Sprinkle evenly over the top of the apple mixture.
16.Place the tray on the middle shelf in the oven and bake for 50-55 minutes or until the top is firm to the touch and is a golden brown colour.
17.Allow to cool in the tin before cutting into the desired number of pieces.
