Recipes to celebrate Filipino Food Month

Celebrate with these two mouthwatering recipes to impress your guests!

We’re celebrating Filipino Food Month – as declared by the Filipino government to spotlight the fascinating culinary traditions of this country – with these two delicious recipes, courtesy of Wing Yip. Get traditional with the yummy chicken adobo, or get rolling with delish yummy spring rolls!

filipino food monthVegetarian Spring Rolls 

Ingredients

  • 230g Carrots (grated)
  • 1 small can bamboo shoots (rinsed and cut into strips)
  • 1 packet beansprouts (approx. 230g) – blanched
  • 90g dried Chinese mushrooms (soaked in warm water)
  • 4 spring onions (finely sliced)
  • 1 jar Wing Yip Yellow Bean Sauce
  • 1 tsp fresh or minced ginger 
  • 2 tsp fresh or minced garlic paste
  • 2 tbsp peanut or vegetable oil
  • 1 packet spring roll wrappers
  • Vegetable oil for frying
  • 1 tbsp flour mixed into a paste with water 

 

 

Method

  1. Rinse bean sprouts well, discarding broken roots and bean casings. Drop into boiling water, drain and then place in cold water. When beansprouts have cooled, drain well.
  2. Squeeze water out of bamboo shoots and soaked mushrooms. Cut into fine strips. 
  3. Heat 2 tbsp of oil in a pan or wok and fry minced garlic and ginger. Add carrots, bamboo shoots, Chinese mushrooms and the yellow bean sauce. Cover and cook for 4 minutes.  
  4. Add beansprouts and sliced spring onions and cook for a further two minutes.  #
  5. Season to taste and allow filling to cool. Filling should not be too wet.  

To Make Up Spring Rolls  

  1. Place a spoonful of filling (diagonally) in a corner of the wrapper.  
  2. Roll spring roll away from you until you reach half of the wrapper.  
  3. Fold both sides of wrapper inwards and dab some flour past into the corner of the wrapper and finish making spring roll.  
  4. Repeat this process until you have used up all the filling.  
  5. Cook spring rolls in hot oil or a deep fat fryer until golden brown. Drain well on kitchen paper.

Ingredients

  • 1 whole chicken
  • 75 ml white vinegar
  • 40ml dark soy sauce
  • 4 cloves garlic -crushed
  • 1 onion – finely sliced
  • 2 tbsp vegetable oil
  • 4 bay leaves
  • 1 tsp brown sugar – optional
  • Pepper to taste
  • Chicken stock or water – optional 

 

 

 

 

 

Method

  1. Clean and cut up the chicken into pieces by first dividing the thighs, drumsticks, wings and the breasts.  This should give you about 8 – 10 large pieces.
  2. Season the chicken with salt and pepper.   
  3. Place the oil in a large pot and fry half the garlic and onion.   
  4. Add the chicken and cook for several minutes, turning the pieces over in the pot. 
  5. Combine the vinegar, soy sauce & remaining garlic & bay leaves and add this to the chicken in the pot. 
  6. Bring to the boil, lower heat, cover and simmer for 20 minutes or until the chicken is cooked. 
  7. Remember to turn the chicken pieces over in the sauce. 
  8. Add a little chicken stock or water if more gravy is required. 
  9. Adjust seasoning and serve with steamed white rice.
