RUM COCKTAIL INGREDIENTS
- 60 ml Blackwell Rum
- 60 ml Pineapple Juice
- Lime for garnish
METHOD
- Shake together
- Strain into a chilled cocktail glass and garnish with a lime wedge
- OR garnish with a pineapple leaf instead and use ice cubes in the glass.

Basil & Rose Zombie
RUM COCKTAIL INGREDIENTS
- 40 ml Ron colon rum; fat washed with Basil olive oil*
- 20 ml Rose liqueur
- 20 ml Rose syrup
- 40 ml Pineapple juice
- 20 ml Cranberry juice
METHOD
- Shake & strain. SIMPLE!
How to fat wash rum:
- 40 ml Ron colon rum
- 20 ml Basil olive oil
Combine the two ingredients in a sealable container & store in the freezer for 6 hours. The oil will freeze, the rum will not. Muslin cloth strain out the mix and enjoy the flavoured results.

RUM COCKTAIL INGREDIENTS
- 30 ml Lil rays rum
- 10 ml passion fruit liqueur
- 10 ml Lemon juice
- 80 ml Soda water
METHOD
- Fill your cocktail glass ice
- Simply build all ingredients on top of one another
- Pour everything into a highball glass
- Garnish with mint sprig & passionfruit half

RUM COCKTAIL INGREDIENTS
- 30 ml Lil rays rum
- 20 ml Sweet cream Sherry
- 20 ml Lime juice
- 20 ml Homemade apricot syrup*
Method
- Add all ingredients to a cocktail shaker
- Shake
- Fine strain and pour into a Martini glass
Homemade apricot syrup:
- 1 apricot
- 250 ml boiled water
- 125 ml by volume caster sugar
Dice and remove the pit of the apricot. Combine the above, stirring to mix the sugar. Leave to infuse for 30 minutes. Strain out the mixture and enjoy.

RUM COCKTAIL INGREDIENTS
- 50 ml Sly Dog Spiced Rum
- 50 ml Apple Juice
- 10 ml Brown Sugar Syrup
- 10 ml Cinnamon Syrup
- 25 ml Ready to pour Custard
- 3 Drops Vanilla Extract
- 1 whole Egg
- 4 Blackberries
Method
- Add all ingredients to a cocktail shaker
- Hard shake
- Strain and pour into a rocks glass
- Garnish with crushed digestive biscuits, ready to pour custard, blended cinnamon sugar and blackberries.

BLACK PASSION
RUM COCKTAIL INGREDIENTS
- 2 parts Blackwell Rum
- 2 parts fresh orange juice
- 1 part passion fruit puree
- Slice of orange for garnish

World Pilot
RUM COCKTAIL INGREDIENTS
- 35 ml North Point Pilot Rum
- 10 ml Sweet Vermouth
- 10 ml Chocolate Orange Liqueur
- 15 ml Lime Juice
- 1 bar-spoon of Apricot Jam
Method
- Add all ingredients to a cocktail shaker
- Shake
- Fine strain and pour into a pony glass
- Garnish with atomised orange liqueur and decorate the rim with dark chocolate*
To make chocolate rim:
Boil a pan of water and place a heat proof bowl over the top. Add 50g of dark chocolate and stir until melted. Dip the glass in and rotate until covered. Stand up right and leave to set in a fridge for 30 minutes.

RUM COCKTAIL INGREDIENTS
- 30 ml Lost Years Four Island Rum
- 10 ml Apple liqueur
- 10 ml Creme de cassis
- 15 ml Lemon juice
- 65 ml Hibiscus Long Tail mixer
Method
- Build all ingredients over ice in a rocks glass
- Garnish with pineapple leaves and apple wheel

The TBJ Rum & Raisin Sour
RUM COCKTAIL INGREDIENTS
- 40 ml 1731 Rum
- 10 ml Amaretto
- 30 ml Lime Juice
- 20 ml homemade Raisin Syrup*
- 1 Egg White
- 2 dashes Chocolate Bitter
Method
- Add all ingredients to a cocktail shaker
- Hard shake
- Fine strain and pour into a coupe glass
How to make Raisin Syrup:
Combine 100 ml boiled water, 50 ml caster sugar and 15 g raisins. Infuse for 1 hour. Strain out the mixture and enjoy.

Coffee Colada
RUM COCKTAIL INGREDIENTS
- 30 ml Rum Java Signature
- 20 ml Coffee Liqueur
- 65 ml Pineapple Juice
- 35 ml Coco Lopez
- 2 dashes Chocolate Bitter
Method
- Shake all ingredients in a cocktail shaker
- Strain and pour into a rocks glass
- Garnish with pineapple leaves

Zombie
RUM COCKTAIL INGREDIENTS
- 50ml Hawksbill Caribbean Spiced Rum
- 25ml lime juice
- 25ml passionfruit syrup
- 25ml Orange juice
- 10ml Grenadine
Method
- Shake all ingredients with ice until nearly fully dissolved.
- Pour into a hurricane glass filled with crushed ice.
- Garnish with an orange slice and cocktail cherry.

R’n’R Colada
RUM COCKTAIL INGREDIENTS
- 37.5ml Hawksbill Caribbean Spiced Rum
- 50ml half & half
- 12.5ml fig liqueur
Method
- Shake all ingredients first with ice, strain from the ice and shake again.
- Dirty pour and garnish with a pineapple leaf and grated nut meg.

Daiquiri
RUM COCKTAIL INGREDIENTS
- 50ml Hawksbill Caribbean Spiced Rum
- 15ml grapefruit juice
- 10ml lime juice
- 1 teaspoon demerara sugar
- 5ml maraschino liqueur or syrup
- Grapefruit peel to garnish
Method
- Best served when shaken, double strained, and served in a chilled glass.
- Garnish with a grapefruit zest twist.

Dark ‘n Stormy
RUM COCKTAIL INGREDIENTS
- 60ml Hawksbill Caribbean Spiced Rum
- Ginger beer
- A couple of lime wedges
Method
- Pour the rum into a glass over ice.
- Top with ginger beer
- Garnish with a couple of lime wedges, squeezing them before you drop them in.

Planter’s Punch
RUM COCKTAIL INGREDIENTS
- 300ml Hawksbill Caribbean Spiced Rum
- 9 dashes angostura bitters
- 100ml lime juice
- 60ml sugar syrup
- 30ml grenadine
- 300ml Soda
Method
- Stir all ingredients, minus soda, over ice in a pitcher.
- Add soda and stir briefly to ensure fully mixed.
- Serve into a rocks glass over crushed ice and a mint sprig for garnish.
