KIDS’ LOLLIES RECIPE

Bettina Campolucci Bordi’s kids’ lollies recipe is the perfect accompaniment to the warm summer days ahead. In Bettina’s own words:

“These lollies are easy to make, quick, and inexpensive. They also give you the chance to get really creative, using lots of different fruits or juices to create your own combination of goodness that the kids will love. There is no need to spend money on expensive trendy ice lolly moulds, either; I like to use using old yoghurt pots – they work a charm!”

Makes 4

Ingredients

  • 250g strawberries or raspberries
  • 100 ml natural yoghurt, or apple or orange juice
  • 1 teaspoon honey

Method

  • In a blender or food processor, whizz up your ripe berries with the yoghurt (or apple or orange juice) and 1 teaspoon honey. Taste, and add a little more honey if you think you need to.
  • Divide the mixture between 4 moulds, then pop a stick into each one. Put in the freezer for at least 4 hours or until solid.
